What benefits are available for veterans in assisted living facilities?

I would suggest you contact the VA. They have offices that deal with this type of stuff. Another point of contact is an organization called DAV (Disabled American Veterans) or one of the service organizations, like VFW or Am. Legion.
In fact I would check with all of them and compare notes.
I think there is a VA web site that might have answers.
