If I am one of the names on both checking accounts, can Medicaid take all the money?

I'm assuming you are caring for one of your parents. Medcaid allows the recipient to keep $2,000 in a bank account. Even if your name is on the account, it makes no difference. If there is more than $2,000 you might not be approved, or if already approved, could lose Medicaid. I think this is a very fair system. They allow you to keep around $72 per month from social security. The rest of SS is used to pay health insurance and a portion of the monthly cost at the nursing home.
