In this time of COVID-19 with its stress and the combined stress of caring for a mom with dementia, how can I try to take care of myself?

I am eating too much, drinking too much on off time. HELP!

You sound like me in that I am a stress eater too. Thankfully I'm not a stress drinker though, as that can lead to a whole other set of issues. A lot of caregivers turn to alcohol to try and drown out their reality, which is never the answer.
It's important that you find other ways to deal with your stress, more healthy ways like going for a walk around your neighborhood, or going to the gym. And going out with friends to lunch or supper, or church, or just going shopping, can help relieve some of the stress and give you strength for another day. It's so very important that you take time to do the things that you enjoy.
And yes, you can do everything I mentioned and more with Covid still hanging around. More and more things are opening up, and life is slowly but surely get back to normal, so now it's time to make yourself a priority too, and start taking care of you.
And if this caregiving is getting to be too much, perhaps it's time to start looking at bringing in some outside help(using moms money)or even looking into placing her in the appropriate facility. You must not only do what's best for your mom, but also what is best for you. I wish you the best in getting things figured out.
