Question about absentee voting. In my state they only have in person or mail in voting. Why in Arizona a caregiver cannot absentee?

Can I fight to have absentee Voting my in state to vote that way?

Absentee voting and mail in voting are essentially the same things. You used to only be able to use the "absentee" voting if you had a legitimate excuse, like out of the country, disabled etc., but because of Covid, this past year the government made it easier for folks who didn't want to risk getting Covid, by sending out the mail in voting. So as you can see, they're basically the same things, but with the mail in, you didn't have to have a legitimate excuse to use it.
So if you didn't in the last election get a mail in vote, make sure you request one for the next election, or perhaps by then we'll be back to just the absentee ballot.
