I have a friend whose mother is mid-stage Alzheimer and she is constantly stuffing her dog with food. Is there anything I can do to help?

She obviously thinks this is the thing to do. I don't know what your really can do about it, except hope that the dog will quit eating when she or he is too full for comfort. It's not the healthiest thing for the dog, of course. Your friend may even forget she fed the dog. Sometimes people forget they, themselves, ate, and they want to eat again. It's very hard.
