I care for my mother (85) in our home. She doesn't want to go on vacation with our family. Looking for temporary care for her. Suggestions?

I could insist she come on vacation with our family but that could be miserable. I don't think she feels safe being alone in our home. I have a girl that comes once a week to take her shopping but I think she's too busy to stop by everyday and bring her supper. Mom has money to pay to go to assisted living for a week but I don't know if there are places that will do that. She says she would rather do that than go on vacation with us. She has lived in independent living before.
