My mother and I have a joint checking and savings account. Do I claim the entire amount for Medicaid?

Yes you report all the money to Medicaid.
You give Medicaid 5 years of the bank records, including cancelled checks. You should NOT be listed as a joint owner, only as a signer on the account.
