Legal Medicaid spend down. Any advice?

My mom will most likely end up in an assisted living or a nursing facility full time. We will have to "spend down" for her to qualify for Medicaid. Can she pay me for my time taking her shopping, doctors, and errands in the past to help spend it down and if so how far can we go back?
