What can I legally do if my sister, who has power of attorney for our mother, is stealing from her?

What if a sibling got mom to sign power of attorney when she had parkinson's now she passed away and sister stole her money before she died. Mom just passed away and we found out that sister has been stealing all of the monies, insurance polies ect. then we found out she got mom to sign power of attorney when she was sick with parkinsons, is there anything that can be done from a legal standpoint?

Go on your local Court's website, iif available, and see if they have an Eldaer Abuse court. Or check you local BAR association for free legal consultations in the area of Elder Abuse Many attorneys will give you a free half-hour consultation. If your sister is actually stealing, then she can be criminally and/or civilly charged.

My big question is what the money was used for. POA comes with responsibilities, so ask your sister for an accounting of the funds. It may be that the funds were used for care of your mother. If so, she should have records to account for the expenditures.
