Tonight I'm making a casserole I can toss in my little counter top oven and forget. I'm using shredded cabbage, onions, peppers, cheemo perogies and diced kielbasa, I'll stir in some Greek style yogurt toward the end.... should be good (I hope).

Nacy, love beef stew with mashed potatoes. Mmmmm! And it makes great leftovers.

I never get tired of cooking, I get tired of cleaning up the mess I make cooking.

Riverdale - sounds delicious,

Pan fried salmon here with lots of lemon and pepper and a simple green salad. This afternoon I made a huge pot of chicken veg pasta soup. R can take some to the farm. It's a meal in a bowl type of soup and great for someone working outside in this cold winter weather.

I made Greek macaroni and cheese. I use feta cheese,olives,zucchini and peppers.After that has all cooked I baked it for around 45 minutes. It is delicious and if you like what I described it is a nice change from regular macaroni and cheese. I put the feta in the sauce. If anyone wants a better understanding of it just respond or message me.

Nacy, I found just using dawn with water and wiping something that is baked or caked on will be easily rinsed off in a moment or 2.

I knew when that expensive spray came out it was a money making marketing fraud. Because Dawn is such a great product they have to find ways to make more money, shame.

I agree. An Eggplant lasagna does sound so awesome! I had a wonderful weekend off! I got to spread my wings, sing, dance, and even sleep in my bed. Some positive answers in life are a lot to a person. An in or outside joke, a smile, a huge. With writing or saying it. Means a lot. Well, a huge and smile to you all and if you have any great ideas for meals I would love it. Thank You!

Golden, farm fresh eggs are so wonderful, tell R to get those chickens. :-)

We are talking about getting some, i just paid 7.49 a dozen and was happy they had them.

I miss the farm eggs since R moved from the old place to Mike's farm. But he is thinking of keeping some chickens there. Yay!!!

We had eggs over roast beef hash and a sliced apple.

Eggs for me too. Fried egg and a slice of precooked bacon on toasted, thin sliced, 7 grain bread, x2. Not very nutritious but I’m out of fresh vegetables until tomorrow. I’m still off ‘real’ cooking which means I’m still off ‘real’ shopping and ‘real’ eating, as well.
Example: yesterday I ate 2 broken waffle cones with a protein shake for lunch. Hah!

Hmm, I often order the beyond meat burger from A&W (when I have a coupon of course lol), I haven't had the courage to try the one from KFC yet. But I can't see the point of serving fake meats at home when there are already so many wonderful meat free meals that can be made without adding over priced over hyped fake meats.

Orange Chickenless it says. No chicken. Thinking about it. First, I will need to find out what is in it if it's not chicken.

Did you know you can spend $100 in under 20 minutes at the store now?

If I add the peppers and rice, it could be good.

I actually looked up how to freeze the peppers. Remove the seeds? There have been times that chopping the peppers, removing the seeds resulted in eating less peppers that night because there was no time to be chopping all that much.

Give me a good steak and salad for a 10 minute meal any day.

I sauteed onions, garlic, spices and crumbled tofu and mixed it with a package of Spanish rice, then stuffed peppers halves I had frozen and surrounded them with jarred pasta sauce. Oh, and a I put chunk of cheddar in each. This turned out amazingly well!

Homemade beef soup. I always keep a few kinds of homemade soup in the freezer for a nice meal on a cold day that I don't really have to cook.

send - glad it is working for you. It's very healthy food and tasty and cheap!!!

I used to make a big pot of chili one night, then serve the leftovers as sloppy Joes the next night and if anything was left over from that I added more tomato and served spaghetti the following night. No one ever complained.

Today we had left over turkey and gravy (frozen). I am not a fan of left over frozen turkey so I made the rest into turkey veg tomato soup. It was much better.

When the numbers of people in the house declined I used to get the butcher to saw a 12 lb turkey in half lengthwise and only roast 1/2 at a time and keep the other half in the freezer. It worked much better, Must do that again.

Day two of Minestrone Soup, I cannot thank you enough for the ideas Golden.
We are feeling well-fed.
The small amount of leftover was just enough when adding some pinto beans and frozen spinach. More of a stew today.
You are right about the Pasta-balance the amount with the beans or you will have more of a pasta dish (still very good!) than a Minestrone.

I prefer a stew or casserole to a soup usually, but this Minestrone effort was so good! Yum!

The beans count as fiber.

send - URW. I have been caught a few times so I nearly always soak beans over night. You only need a small amt of baking soda (you can look it up online). Later I had to add lemon juice to neutralize the baking soda. Most of the beans were somewhat mushy by the time the hardest ones were soft enough. R said initially he could have used them for ammunition! To give it more "shape" I cooked up some kidney beans separately and added them. It was good!!!

With what was left over, we cooked some pasta and fried up some hot sausages and added them along with tomato juice, red pepper flakes and cayenne. More of a pasta dish than minestrone.

Online I read that if boiling with baking soda doesn't work, throw them out. They are too old.

Oh - another tip - cook them with the lid on the pot. Without the lid they stay harder.

Wishing I had known that beans soaking overnight could be softened by boiling in baking soda if they never softened.
I had given up cooking beans after that happened!

A minestrone sounds good right now, but will need to use canned beans.

Jenny - second day for many dishes is best. Boni who started this thread, and her recipe for eggplant lasagna, is long gone,

Psue - I think cooking gets hard wired by a certain age. It will come back. You won't have to relearn, I am sure of that. Popcorn and salad are great for many reasons. Pizza too!

13 bean soup and was it good!!! I baked R some Pillsbury Croissants to go with it.

I soaked the beans overnight and they didn't soften, so I added some baking soda and boiled them and that did the trick.

Today I will ramp it up by adding some pasta and more tomatoes to make a type of Minestrone which will give him several meals to take to the farm. Good cold weather food. The basement there flooded so he has his challenges even to figure out where the water is coming from.

My Carer’s Cookbook would consist of popcorn, Lean Cuisine frozen pizza, bagged salad, scrambled eggs on toast and…..more popcorn. I used to be a really good cook but now my head doesn’t have room for it. Hoping things settle down soon so I can relearn.

(Mmmm, spaghetti bolognaise - I remember spaghetti bolognaise!)

So true - some people are in such a dilemma tho - dont know which way to turn. But - hey - its dinner time. I cooked spagetti bolognaise - enough for a couple of days so no cooking tomorrow - just rest and feet up!
Next day always tastes so much better than the first day as the flavours sink in.
I added some red wine as well. (such a waste huh!!) :-)
Eggplant Lasagna - my sister would love that - I'll pass that on. How unique is that receipe and healthy. Nice one. Maybe as you care in any spare time write a cookbook. You could call it - erm... The Carers Cookbook :-) tee hee
