smeshque - regarding pizza dough with garbanzo bean puree, I didn't use any recipe. It's my own concoction.

I use a pack of the instant yeast
3.5 to 4 cups of bread flour
1/2 pound of dry garbanzo beans, soaked, cooked and pureed with enough water
2 teaspoons of sugar
salt

I mix dry ingredients together, then mix in the puree beans, then add water just enough to kneed the dough to a smooth texture. Then I let it rise in the fridge overnight.

I would love to know how you make your tamales if you can share the recipe. I made tamales a couple of times, but they always came out dry and hard. I think I have to use fresh maize dough. I also have trouble with the sauce which didn't taste authentic.

I was in the Medicaid class all day. We took the easy way out. PJ scraped the snow off the patio and had grilled chicken and green salad. I'm now officially able help complete applications for Medicaid.

DD got us a Home Chef box,, hubs is in heaven in the kitchen making some chicken dish.. can't wait! We did Hello Fresh for a year, until travel got in the way.. and we just never got around to restarting it. Hubs has also recently bought a smoker,, and he has been smoking away.. but its a learning curve and some if it is too strongly smelling of smoke for me. He did do a great pork loin though.

I made a batch of Southern Bacon-Fried Cabbage today and had a bit of it for lunch. YUM. Not sure I'll have it for dinner tonight but might have the leftovers tomorrow.

I have stuff in the freezer that's been in there for a few months...time to start using that up. Guess I'll be doing some cooking over the next few days.

Along with his home sandblasting glass business, hubs is now the official cook (5 days a week-lunch) for our new neighbor (who is the boss of a very large cooperation). He is a friend of a friend of ours and now our across the street neighbor.
This man is single and eats out for every meal. Both he and hubs are loving it, as hubs loves showing off his cooking skills and the guy can relax and not have to eat out. We get the extra portions for our dinner.

Tonight's entree will be sautéed fish, beets, broccoli, garlic ciabatta bread and apple crumb pie.

Our neighbor likes to eat healthy so maybe hubs and I will loose a few pounds. (Wishful thinking!)

Pineapple and cheese pizza. I am intrigued by the beans puree in dough, would like that recipe.
I love spicy v-8.
We make homemade tamales every few months. People order them from us as well. They are good. I makes beans and rice tamales for myself. Don't eat the meat ones.

I can't remember. I think it was a spoonful of peanut butter. Lawdy, I am getting old. R made himself a steak. I wasn't hungry and have resigned as cook. My new gel nails are a lovely shade of orange sherbert (with sparkles), and I want to keep them in good shape.

Homemade pizzas. Made pizza dough from scratch with my daughter. She decided she wanted to eat healthier, so we mixed in 1/4 puree garbanzo beans in the dough. Didn't change the taste, not that I could tell. Less carbs more protein. So, that's all good. Next time, we'll try adding puree spinach and make green pizza dough.

Homemade tamales. MMMM! Not made by me. There is a man that comes by the office every few months, then delivers the next day. They were absolutely wonderful. Now for the Blue Bunny chocolate mini drumstick things. Have to have chocolate after Mexican.

I made some tomato soup and added about eighth cup of (mildish, red) hot sauce plus extra water. I'm trying to burn out this little sweat & chills bug I've been experiencing. The soup was good, I added parsley and basil. I'll do this again in the future if I have a sick.

cdnreader - I go through phases like that too, where I just don't want to cook or am too busy, and dinner is often a can of soup, crackers and cheese, or just chunks of cheese with salami slices or such. Maybe some cottage cheese on the side or at most, a small salad.

Then there are days like Monday, where I get into a cooking frenzy - made crack slaw (which is like a low-carb hamburger stirfry with shredded cabbage, hamburger and stirfry seasonings), then made a good size batch of low-carb marinara sauce with meat and froze it, then cooked a whole chicken overnight in the crockpot and tossed veggies into it in the morning for some good broth and chicken.
I still have another package of shredded coleslaw mix, so I might make some LC bacon-fried cabbage. YUM.

I made the mistake of asking a roomful of guys home from college for the weekend what they wanted for dinner. A bunch of different answers. Chicken and dumplings, creamed tomatoes with biscuits, fried chicken, burgers on the grill. My favorite - the kid who went in the kitchen yelled leftovers and started fixing himself a plate. The rest of them went to the kitchen and fixed plates. I think I'm off the hook. PJ and I might go out to dinner.

We had breakfast for dinner last night Becky...It was just so-so.I made a ham and cheese omelet,fried potatoes and waffles.My dH lapped it up,even said it was good surprisingly.
Tonight I made macaroni and cheese and leftover meatloaf sandwiches.
Easy and filling.

I had a Cajun chicken pasta dish for dinner. It was very good. Too many loud guys at dinner. I put on headphones and played on my IPad. Little girls played on their DSs'. I'm afraid the females at dinner were rather rude. On our way to hotel. I his should be interesting.
