Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.

As to cooking..tonight we are having an old fashioned breakfast for dinner...sausage, scrambled eggs and toast. Tomorrow making an old fashioned roast with potatoes and carrots.

SO sorry to hear you have/had pneumonia. I've had it 3 times and never want it again. I can't believe how tired you get. I was exhausted just walking from the living room to the kitchen.

Bad thing is, there is usually no such thing as a small case of food poisoning and you spend the next 36 hours in the powder room.
The only good thing about having diverticulitis was loosing 17 lbs. Ten came back, darn it.

I wouldn't be so worried about your cholesterol levels as your SUGAR level. That meal is 90 % carbohydrates (breading for tenders, fries, bread, bbq's sauce, cookie and soda-all carbs). Good you're not diabetic. One eats at KFC for its finger lickin' goodness not to watch carbs! 😋

I guess you could heat it up in a frying pan on very low heat with a lid (?) I wouldn't try already popped corn in a microwave.
And that's the last thing I remember from last night. hahahahaha! The food is fine. It might be extra soft from sitting in the oven all night, haha, but I don't mind.
Makes for a yummy breakfast! Way better than boring oatmeal, haha.
PS - that's why I've learned to always set a timer!
It's simple. I make the same way most every time, with a few variations in what veggies I add. But... I like it! And it's healthy enough. Nom nom nom nom...

I always buy the already made popcorn. Our household favorite is Angie's BOOMCHICKAPOP Popcorn Sea Salt.
Everyone on puree at hoca gets ice cream - some meals mom refuses the puree and only has the protein shake and ice cream
