Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
We did end up having breakfast tonight.I made fried potatoes,an ham and cheese omelet and pancakes but there weren't less dishes darnit~
Tonight I might make breakfast for dinner,either that or soup and sandwiches...something easy with less dishes.
We had salmon, green beans and a unique blend of mushrooms, onions, poblano chilies and cream. Yum

I'm just so tired this week, it comes and goes, but it hit hard on Monday after not sleeping well and having an early doctor's appointment, and has kept going all week because try as I might, can't seem to get to sleep early.
I'm eating easy stuff this week, and indulging some cravings. (I can always eat at work but it's not often appetizing to me anymore.) On the way home last night, I asked myself "Self, what sounds good for dinner? It has to be easy and quick and tasty." Self replied "Hmmmm... what about a BLT sub from Subway?" That sounded good so I went to the Subway by my house but they were closed, not sure why. I went to small local convenience grocery and bought bacon and bread and went home and made BLTs.
They were mostly good. The artisan sourdough bread -- which was one of two bread styles at the small local store, the other being French baguette -- wasn't ideal for my BLTs, though. You'd think it would be.... but the crust was so thick and the bread was so chewy... It was like chewing on cardboard to get to the middle part where the nummy bacon, lettuce, tomato was.
I guess the point of buying ARTISAN bread isn't for sandwiches. Not sure exactly what it's for, but it's not for sandwich bread.
Ran strings thru end of season green beans and hung in the barn to dry for leather jackets. Started pickle corn and beets. Finished canning a big crock of sauerkraut.
Bought two bushels of apples to make apple sauce and then apple butter. Things are getting done.
Greens salad with Chicken Sausage. Can't see it ever being a thing on any restaurant menu, but it should be because it's really good. nom

I think I'll have one of my healthy (not healthy) meals today. Yep............:)
We had our beef tacos last week, so I am defrosting chicken for tonight. We need to use up the cilantro, yellow squash, zucchini squash, and purple onion. Add brown rice-all in one huge pan.
What are you all having, or have you already eaten?

I came home at 7:00pm. Sis offered me her microwavable spicy chicken wings. There was only 4 pieces left. I took 2. She cooked so little rice and ate her half of the rice pot section. Tonight, I practically took most of my half of the rice pot. I knew that I would still be hungry with just 2 small pieces of chicken wings and rice. So, I opened a can of corn to help fill up my stomach. Then snacked on a small bag of Doritos. And then a fudgsicle... I'm still hungry...
