Golden's beef stew sounds good, I'll have to put that on my list. In the mean time...

Nuke an equal amount of chocolate chips and peanut butter until melted. Stir in coconut and rolled oats, a spoon of sugar is optional. Drop by spoonfuls on a plate and refrigerate until firm. Enjoy in moderation.

I am not Greek but found a good recipe in a Cooks Country magazine Could have been America's Test Kitchen can not recall what magazine.
But I do love cooking and baking. Gave me a great "escape" of sorts when I was caring for my Husband.
I love to pick something then plan a meal around it. I love experimenting with recipes.

Grandma1954, My dad use to make Spanakopita. He was not Greek but he was a Chef and he worked with Greeks and made Greek food all the time. Man now, I have to find his recipe for it or I just use yours. I haven't had it in a very long time. Thanks for reminding me!

Msmadge, yum, goat cheese sounds good.

When you said nuts I immediately pictured some chopped almonds mixed with the cheese to add a nice crunch and almonds are soooooo good with dates.

Grandma1954. Are you Greek? My father was and was an amazing cook as was his mother. You described spanakopita very well. I recently found that Whole Foods makes a very good one. I judge places by their versions. Hope you enjoyed yours.

Spanakopita is of Greek origin.
About 10 layers of phyllo dough, brushed with butter between layers then a mixture of spinach, feta cheese, I use a bit of Pecorinao as well, garlic, green onions and I use lemon also. Then that is topped with more phyllo dough then baked to a golden brown. Great as a dinner or a side. Good hot or room temp.

Well..I heated up some chicken lemon soup I made but I am preparing for dinner tomorrow. Having a few people over and I love to "play with my food" So the menu is..
Lemon chicken with rosemary and garlic, will toss in some baby potatoes. Making Spanakopita (spinach pie) and I experimented with a tiramisu I flavored it with lemon curd and used limencello in place of the coffee. It will be great or an utter failure!
Just reading this back..this is a lot of lemon for a self proclaimed Chocoholic!

One of the food trucks here has just opened a brick and mortar. Mexican menu. Supposed to be quite good, I have never tried it. Was thinking about it for tonight, but, dang the wind has picked up again! We will see.🍺

May be a beer, sausage and sauerkraut.

Ali, I think I prefer Golden's chicken fingers!

Be careful with thAt cabbage and kitties, they are know to enjoy their veggies too. I will never forget a time that L was eating a salad, set it down on the coffee table for a bathroom trip. He came back and Macy, the golden, had scarfed down his salad! Shocked the heck out of me.

Half a cooked meatloaf now in freezer in three pieces. Must try some pasta something next. Anybody ever tried the frozen tortellini at the grocery store? Or frozen tamales? Maybe that would be a good idea can take out just what I will eat in one sitting. I really enjoy Marie callender's chicken pot pies. Anybody try those home chef type delivery services? Maybe that would get me more inspired. Wouldn't a food service like that be great if you could order just one or two servings?

I've been missing this thread. I went back and read the last 2 pages. I learn stuff here, if I remember to read it.

I just learned about rutabagas, meatloaf, and a heck of a lot about chicken feet, lol.

Gershun, I wish I didn't feel like eating much. I feel like eating all the time, never sugary stuff, but hamburgers and egg rolls and big, fat, salads with everything in them and lots of prosciutto for snacking. I would like to lose 10 pounds but it ain't happening, not even with working out several times a week. I need to diet, too, if I want to lose some belly fat and I don't want to diet. I really like my food these days, maybe a bit too much. Oh well.

I ate at work earlier and wasn't too hungry tonight so I threw some turkey lunch meat in a bowl around 9pm and put in on my bed, thinking I would snack on it while I surf online. Did I forget I had cats or what? I saw Divo's face down in the bowl when I came back in the room.... debated on whether or not to throw out the whole bowl... decided I'd throw away the top piece and take my chances with the rest of it. Blech.

At least he doesn't like the red cabbage I have in the other bowl and that's safe from him.

I snagged a 50% off rotisserie chicken from the cooler at the grocery store and reheated it for my supper, tomorrow I'll make broth with the bones and some leftover veggies. SharynMMarie's pasta sounds yummy, maybe I'll do a chicken tetrazzini with some of the chicken.
