With such delicious items posted here I am embarrassed to say I am having cereal and toast tonight. Husband is out of town for a few days so I can be lazy and pretend to be a kid for a night.

I was looking for a way to use a can of creamed corn that has been lurking in my pantry far too long and found a recipe on allrecipes.com. for "mexican style cornbread" that called for one 8 ounce can of creamed corn. As I was adding ingredients I realized it would be far too wet if I added the recommended 1 cup of buttermilk - it's a good thing I'm not one of those people who blindly follows a recipe even when it looks off because when I checked later I saw that my 398 ml can of corn was way bigger than 8 US ounces.
(and don't ask me why there are 398 mls instead of 400, I always assumed it's because the cans are made in the USA but google tells me that this size equals 13.45 US ounces so that wouldn't make sense either😕❔)

And yes, the cornbread (sans buttermilk) is pretty good😄

Wait up! I just read you might have had won a free donut 5 hours ago?

Way too many carbs, but that is okay, this is Saturday, and I am not the donut police, lol.

However, now that everyone brought up donuts, I will need one.
Is there a craving schedule in the universe or something?
I have wanted a donut, my own craving, for about 4 days now, and have resisted.
Maybe there is a rash of advertisements coming on in our sleep?

Maybe just a few donut holes will do.

That sounds good, but I'm out of potatoes. And canned chili.

I guess I'll start with a bowl of cereal... honey bunches of oats.

And an orange. I've got some clementines that have been in the fridge since christmas.

cwillie - do you like baked potato with butter or sour cream? I usually pop a couple of potatoes in the microwave and 'bake' them for 3 minutes, then turn over and 'bake' for another 2-3 minutes. If you have a hot dog or sausage, cut one up in pieces and cook it in the microwave for a few minutes. Mixed the hot dog/sausage in with the potatoes. Enjoy with sour cream or plain yogurt if you want a healthier option No dirty pots or pans.

I just want something filling and delicious that is not totally bad for me. Oh yeah, I don't want to have to spend more than a few minutes making it.
Any ideas? (LOL)

DH had Venison Sweetish meatballs and rice, I had my usual black beans and salad, Mom is still trying to eat up her meatloaf from Fat Bellys.
I had made some pecan brittle, which is the treat of the day for them. I have done well, staying away from it. Yay! Because it is so addicting once you start.
I have been thinking of trying some walnut brittle, I wonder how that would be. My DH loves the walnut pie, so I might give it a go.

Today I felt like making something that my dad would have made me.

I sautee some pork cutlet strips with onions, mushrooms in a E.V.O.O, butter, white wine, garlic, fresh parsley, season salt, and made Angel hair pasta and tossed it with the pork and sause. Then I threw in fresh cherry tomatoes cut in half. I guess, I just needed to remember my dad today!

We had dinner out, since we were on the road. We came across this place called Fat Bellys Diner. Mom got tickled at the name and wanted to eat there. It was really good. DH got the Fatbelly burger, it was huge. I was quite impressed that he could eat it all. Mom had the meatloaf special and I had a grilled cheese and salad. It was the best grilled cheese I think I have ever had. They put American, Swiss, and Pepperjack cheese on it. The portions were very generous, hence the name Fat Bellys I suppose. But it was good. Mom got a tshirt :)

We had lunch with a friend and the restaurant had Chilies en Nogada on the menu. That's a first, as this dish is only traditionally served in September for Mexican Independance Day.
It's a Pasilla chilie stuffed with hamburger, apples, raisins and spices. It's covered with walnut cream sauce and pomegranate seeds are sprinkled on top. The colors green (chilie), white (sauce) and red (Pom seeds) represent the colors of the Mexican flag. It's yummy!

We'll have something light for dinner.

Happy Chinese New Year and Year of the Pig to you too Send and I think in answer to your question,it would be all three.Luau's will always exist, some pigs will be protected and because it's the Year of the Pig,they will be revered this particular year. That's what I think anyway.

We just had soup and sandwiches again tonight.I haven't been able to bake a meatloaf or roast or cookies or anything since my heating element went out on my oven about a month ago. It's ok with me though, there's been alot less dishes to do.

Happy Chinese New Year, year of the pig.
I forget...is the pig revered, protected.....or eaten for the holiday?

If this were a Luau, the pig would be eaten.
