A big salad (I read someone referred to a kitchen sink salad🙂 so I guess that describes mine) and a BBQ chicken thigh.

A bit chilly today..rain for the next few days after a SNOW fall on Sunday! So I made Beef Barley Soup. Daughter, SIL and grand kids are going to come down she is bringing Grilled Cheese sandwiches to go with the soup. I do have a jar of Horseradish ready for my bowl of soup!
And there will be enough for the next day or so even after a big container goes home with the gang.

I have to admit when I first read that I was thinking of the heinz zoodles in a can that we used to give the kids and I was like - "chicken alfredo over zoodles🤔?"

Chicken Alfredo over zoodles. Hubs wanted low carb. Mother is not a fan of zoodles, but she seemed to like the chicken alfredo -- it had bacon -- of course she did 👍

I made a big pot of chili. Added some chorizo for extra flavor for dinner this evening. Put big roast in the crockpot on low for after church; then make vegetable beef soup with leftovers. Made cloverleaf hot rolls this evening and cinnamon rolls for breakfast.

CWillie,
Those carbs can be deceiving.
Adding up points daily, I get 23/ day.
A Panera Bread cinnamon skone has 25 points on my eating well plan.
A chicken breast has zero points!

CW, I don't usually get the chicken breasts, but go for the thighs instead since it's a more fatty and flavorful piece. Aldi has a big bag of frozen thighs for around $5-6 USD and I can take 1-2 out at a time to defrost, then I usually pan fry them in some seasoned oil, browning each side before letting them cook for 10 mins or so until cooked through. I really like them, they're tasty and juicy.

Kirkwood brand, ice glazed boneless skinless chicken thighs, 3lb bag. So tasty, so easy when cooking for one. :-)

The same brand sells bags of frozen seasoned chicken breasts, too. I'll bet those would be good. But in general, I just eat the darker chicken meat cuts because I prefer them.

Ahh...my Mom used to make the BEST homemade burgers. I've tried, but to no avail. So, rotisserie chicken and salad now. Not as much fun, but it is how it is. Lol.

Sometimes, frozen chicken breasts are chewy, no matter how you cook it.

In a zip-lock freezer bag, I put them in a warm pan of water to defrost, just enough to where they are still cold, but not frozen. Do not forget them, if you are not ready to cook them, refrigerate in the bag.
If you cook an entire chicken breast, it should be done (in a frying pan with olive oil) in about 20 minutes. I add ten minutes, cooked slowly on low heat because the middles may still be frozen a bit or very cold to cook through and through, and I want to be sure it is cooked, forget the thermometer, I hate them.

You can also cook a chicken breast faster, or check for doneness, by cutting them up almost done, as if you were making chicken tenderloins, which are thinner, takes less time (15 minutes).

Or, cooking for o n e person, just buy the frozen tenderloins instead.

Either way, I think not over-loading the pan helps, allowing room between pieces.
Put a lid on it, raises the heat. Soy sauce helps tenderize, but I like the taste without it too.

Think, Brown, saute, then simmer til done.

Urgh, my dinner was horrible☹️.
Does anybody know how to cook those frozen boneless chicken breasts so they don't end up chewy and tasteless? (I used a thermometer so it shouldn't have been overdone)

Thanks for that low carb reminder polarbear. I've been binging baked goodies lately and I just realized 💡 - my cravings are likely tied to the amount of carbs I've gradually allowed back into my diet, time to get back to basics!

I made pizza today, so DH had a pepperoni(his favorite, extra sauce, extra cheese, extra pepperoni), it is good that he has wonderful metabolism and is very physical otherwise I would be terrified for him to eat that. He stays trim, but he can out eat a horse. He had cherry pie for desert.
I had a couple of small slices of pineapple, cheese and lots of red pepper, and a large salad. no desert
Mom had some chicken noodle soup, she has a cold now. :( But she had some caramel corn for desert.

Just made a HUGE pot of Chicken soup. Gave some to neighbor who is on Hospice so her husband does not have to fix dinner tonight or tomorrow. Gave them 2 quart jars.
A friend called and she is going to stop over so I dished out 2 huge portions for the 2 of us and the rest went up the street to my Daughter and SIL and the 3 Grand kids. In return she gave me Grilled Cheese sandwiches, some salad she made and a hunk of the Chocolate cake I made for Easter dinner. (I did not want to bring any of it home cuz I did not need any of it but now that I am having company a little bit of cake sounds good!)

Thanks Sue for the update (warnings) about Tumeric.
Even though I am super-sensitive with meds, I take so little that there is not much to interfere with. And, I take a pill, wait two hours before taking something else.
The same goes for pineapple. I have recommended it to so many for the pain of over-exertion, but they cannot take it because it interacts with their meds.

But for others, it is good to have them know that these "alternatives", whether vitamin supplements, herbs, spices, or just concentrated foods can and do have side effects, just like pharmaceuticals.

Makes one wonder why it is okay to be handing out samples of the liquid Tumeric and liquid coQ 10 at Costco! Found out that I cannot take CoQ 10 by taking a sample last year! Hmmmm? No warnings given to customers.

Sure to be careful, okay MsMadge?
