That sounds really delicious; I love eggplant though I’m usually too lazy to fry it in batches. I bought some zucchini noodles today, just to try them. I sautéed them in olive oil and garlic and they were pretty tasty.

When my husband wakes up we’ll have leftover chicken sorta-cacciatore with rice. I cooked chicken breasts in fresh plum tomatoes, shallots, garlic, mushrooms and peppers.

Homemade wonton vegetable soup. Not as good and authentic as the wonton soup at a Chinese restaurant, but healthier.

Pam, Lobster is usually steamed and served with steamed clams and mussels corn on the cob. Easier to buy at local lobster pound and eat at a picnic table. Lot of people do traditional lobster/clam bake with potatoes and corn on the beach. There are companies that do them if one doesn’t have storefront property. Or you can do your own in boiling water at home or have them boiled at the grocery store. We usually go to a pound. Fun outing and relatively inexpensive if it’s not tourist season.

Pammzi,
You said:
"Ok,when Becky says NE boiled dinner, I think clams and lobster and potatoes and corn.. when Send says it with SPD I think corned beef and cabbage! ".

For sure, when I think of you I will be thinking clams and lobster and potatoes and corn.

Smeshque:
Thank you for the recipe for Tamale Pie-I think that is the one!

New England boiled dinner is pot roast, carrots, potatoes, onion. I usually throw in a stalk of celery and a chunk of cabbage for more flavor, salt and pepper. I get a sirloin tip roast.

Corned beef and and cabbage is usually St Patrick’s Day; sometimes Saturday night supper.

Sendhelp thinks:

New England boiled dinner is a one pot dish consisting of corned beef or plain beef brisket or smoked picnic ham shoulder, with cabbage, carrots and potatoes. When made with corned beef, it's an Irish-American corned beef and cabbage dish, traditionally made around St. Patrick's Day.

Ok,when Becky says NE boiled dinner, I think clams and lobster and potatoes and corn.. when Send says it with SPD I think corned beef and cabbage! Help a MD girl out here! Hubs did make bread pudding with fresh peaches today... and I think he is making tuna casserole, because mom saw an article that said it was Ophras favorite food.. and then I got hungry for it. Funny story.. mom never made anything with canned tuna, I never had tuna fish sammies until I went to prep school.. I thought it was Gods gift to ME !! I love that stuff with lettuce and tomatoe

My mother made really good comfort food. One dish was tamale pie made with cornmeal, hamburger, cheese, olives, and I don't remember what, so I cannot make it.

When CWillie made a dinner just like her mother made growing up, it was so similar to what we siblings ate daily.
Meat, vegetables, potatoes, salad, and dessert.

So I am trying to recall some more.....

Well I had friends over yesterday. I made 2 loaves of bread to go with Chicago Style Italian Beef, Giardiniera, I also made artichoke, spinach dip to nibble on while we were standing around talking. Dessert was Peach Pound Cake and I also made a Chocolate Rosemary Tart. So tonight I had leftovers. A sandwich and a sliver of the tart. The rest of the cake is going up the street to my daughters house. I need no temptation here! (well I might put a slice in the freezer for later in the week)
