I want a piece of that chocolate cake! Yummy 😋

Had dinner up the street at Daughter's. Pad Thai. I cleaned out my fridge, going away for a few days. (I am honored to be escorting a Veteran on an Honor Flight!)
Will be back in a few days so I will go shopping then.
IS SIL's B-day so I made a Chocolate cake. Amazing cake, great taste but as is the recipe makes far more than the pan size called for so I cut cake ingredients in half and frosting ingredients in half. Still made a 3 layer cake! (Delish...Death By Chocolate Cake!) Made a full recipe once before and ended up with 3 layer cake and 2 layers for the freezer. Bent the whisk attachment on my Kitchenaid with the 3 cups of butter for the frosting. Full recipe calls for a total of 4 1/2 Cups of Cocoa for cake and frosting. This is a RICH cake.
Anyway..back to cleaning a bit do want to come home to a clean house.
Be well friends!

Polarbear, my first time making paella, I cheated and bought a paella spice kit on Amazon, then just followed the directions, which were pretty straightforward.

After feasting on a glut of local produce over the last few days it's fast and easy comfort food tonight - a POGO® corn dog and spicy fries with a rye and coke to wash it all down. I may have something healthy later - or not.

That’s how I like to cook, Polar. Cook once and eat twice! I freeze lots so I have reserved food. Knew you were smart!

I'm making an extra large batch of chicken curry to eat with crusty french bread. I'm going to freeze half for another day, just have to add potatoes and carrots later. Also, freezing 2 racks of BBQ baby back ribs for another day. My kids start school already and we homeschool our kids so it gets pretty busy.

Dizzy - I love paella, just can't make it. Tried once, but didn't turn out good. Maybe I'll try again.

Sendhelp, you are more than welcome to share my paella! I get a nice rice on Amazon from Spain, that forms a nice crust on the very bottom of the paella (apparently this is desirable, and it’s pretty good!). I use chicken legs, shrimp, andouille sausage, and (sometimes) clams for the protein, and add onion, garlic, red peppers and green peas, as well as saffron A very colorful dish!

Sue,
I am hopeless when it comes to hospitality, because I would be feeding all the workmen! I still cook enough for 4+ and there is only the two of us.

Often, eating out at a quick fast foods costs too much, because I cannot order just enough for two. Hubs takes it to work the next day.

I keep frozen pizza on hand, and when I cannot cook, it works to have hubs cook it in the toaster oven, often once a week. Yum pizza!

DizzyBritches,
Do not know how you missed that dinner bell, as we eat so late. Usually after 8 p.m., and sometimes as late as 10 p.m. or even midnight.

I love Paella, let me know when you are making some! Seems the stuffed peppers did have the same ingredients as paella! When I make paella, all the veges and meat are cut really big. Same with chicken noodle soup....mine should be called stew. My Mil once went into the kitchen after I was done, and cut up all the chicken, celery, and carrots very tiny.

The one pan method works at my house, I have a huge wrought iron (but lighter weight) pan to cook up these things. and enjoy the challenge after my neighbor loaned me her one-pan recipe book.

On my way Becky.. I really am not a lobster fan, but I do enjoy a lobster roll or salad once in awhile. We are having Costco roast chicken. Mom made herself a tomatoe, lettuce and cheese Sammy.. I caught her eating it when we got home from the river.. we had to mow and she stayed home. ( luckily she can still be home a few hours by herself)

Sigh, I didn’t take anything out of the freezer today. I was hoping to go out to dinner but the workmen building our new closet are still here (6:15 pm). It’s also raining buckets ⛈💦 but it’s 86 degrees, so at least it’s not cold.

Maybe cereal and toast with fresh strawberries 🍓 and cherries 🍒 or a grilled ham and cheese sandwich.
How healthy! Now, if the Mexican hubby will go along with that! (I can’t complain, he does a lot of the cooking.)

Ive GOT to get the app for Uber Eats 😋.

SendHelp, I missed the dinner bell at your place 😛, but those stuffed peppers sound awesome as well as eye-catching. My mom didn’t make them often but when she did, they were a treat.
My husband has gotten it into his head that he hates stuffed peppers, so I haven’t made them.
I used to date a chef. He said that presentation was everything. I would love to cook some pretty dishes, but paella is the only thing that doesn’t look like everything else I cook. 🙃

Becky,

I live in New Orleans and we have fabulous seafood here as well! I do eat meat and poultry but I adore seafood. I love to cook also. Mom and grandma were fabulous cooks.

Cooking is therapy for me. It’s also very satisfying to be able to know that we are able to prepare and serve a delicious meal.

My grandfather had a lovely garden. My dad loved to garden as well. I buy produce but I would love to try my hand at gardening. I’m slightly intimidated by it. Any tips?

NHWM, I love to cook. I’m fortunate to live near the coast and fresh seafood always available. I have a big garden. I’ve traveled a lot this summer and I have a bunch of stuff to harvest.

Monica,

That sounds yummy! I love garbage pizza! You are a very creative cook. Love it.

My brother would love your pizza. Pizza is so easy for casual meals for just us or if others are visiting. He loves tons of meat on it. I mostly eat pizza with all veggies. So we do both kinds.

I do pretty much the same when I am running low on groceries and can’t get to the store. It’s true, they end up being great meals!

I have a friend who told her daughter that all you need to be a cook is great recipes. I told her that while that is true, I felt the mark of a great cook is good ingredients and being able to make a meal without a recipe! She laughed and said that she was never able to do that and that I was always a better cook than she is.

I told her that while I appreciate following a recipe that I would find that boring to do all the time. The fun part of cooking is the creative part. I’d love to hang out with you in the kitchen! You cook like I do! Great minds think alike, right?

I make what my husband calls "Trash Pizza." I keep large Flatbread in the freezer and a ball of mozzarella cheese in the fridge for when it is time to make this. I use every kind of leftover meat....and often several kinds on one pizza! Bacon, turkey bacon, chicken, pork, steak...whatever is leftover. I have never once had a bad Trash Pizza! I brush olive oil, crushed basil and crushed garlic on the flatbread. Top with the cheese, which I chop up. Then the trash goes on top, along with diced red peppers and onions. It is a great way to use leftover meat from dinner or breakfast!
