I make bread two or three times a week. I usually make it on nights when I can’t sleep. I make 4 loaves at a time. I freeze some, and give away any that isn’t needed at my house. I don’t get into the no gluten cooking. I have no one in my family who does the gluten free diet.

i like to bake on nights when I can’t sleep.

Dinner was chicken and dumplings, mashed potatoes, green beans, sliced tomatoes.

That’s what I like, the thin crust. I don’t like thick crust. If I did a pizza I would want a thin crust. I’m with you on the gluten free stuff. If it’s a medical reason I get it, otherwise no.

My daughter tried that cauliflower crust recipe. I guess it’s good. Like you say, trends come and go. She also does the zucchini noodles. For a college kid she eats healthy! I bought her a crockpot to cook in while she is in school. She does soups. So all she makes is a salad to go with it and it’s easy for her.

I've never done gluten free, nobody I know is gluten intolerant and I can't be bothered catering to those who are just following a fad. Regular wheat pizza dough is easy, I haven't found a thin crust recipe I like though.

I know quite a few people who are gluten free these days. That would be a pain to cook gluten free.

I know even some of the pizza places near me offer gluten free dough. Wonder what it taste like. I can’t eat meat on pizza anymore. Lost my taste for pepperoni and stuff like that. I like veggie pizza only now.

Have you done pizza dough? Would that be hard to do?

I like cooking, just don’t eat a lot. Plus I get tired of cooking at times.

My mom’s old neighbor lived alone and made fabulous bread. She gave most of it away. My parents loved her bread. Give it to your neighbors, cwille.

I used to like baking bread, one of the cookbooks I'm keeping is A World of Breads by Dolores Casella and contains over 600 recipes for everything from baking powder biscuits and muffins to sourdoughs and croissants. The problem with baking bread is that it results in eating bread, and if you are single you'll be eating lots and lots more bread than you should.

Not with a bread-maker it's not. Some people find the kneading and knocking back therapeutic, but for those of us who can't be arsed with it a bread-maker is the answer. Chuck in your ingredients, switch it on, and then you still have the choice between shaping your own loaves and feeling all domestic goddessy about it, or you can let it do the baking too (only your loaf will have an annoying hole in its bottom where the paddle comes to rest). Either way, the big plus is you know exactly what's in your bread and it's still a lot quicker than going to the store.

I’m run down and then the immune system gets weak. Still, I haven’t been sick with a cold in years! Well, a cold is not serious so I will be back to normal soon.

I like Paella. It’s sort of like our jambalaya. Well, Louisiana is French and Spanish. We actually have a mixture of cultures and our food reflects that.

I made paella the other night. I had no sausage or clams on hand so it was just chicken and shrimp as the meats. I ate too much of it, so dinner last night was a sandwich. Which reminds me, I need to boil some eggs. I used up the last two last night.

Must get ready for cooler days. Around here, and I never heard of it, chili is served with cinnamon rolls. One of those cultural things. When a kid it was either saltines or corn bread.

I really do not understand the cinnamon roll thing, at all.

They had some sliced pork sauteed in olive oil and minced onion then simmered in gravy, rice, and a salad. Banana nut muffins with cream cheese frosting

DH is 6'2 about 175 and can eat like a horse . It amazes me.
I wish I had his metabolism.

I’m sick. I never get sick. But Sunday evening I started feeling really bad. Can’t breathe. Sneezing a bazillion times, headache, grrrrrrr. So whatever is easy to fix for mom is what she will get and she better not complain either.

I love hot tea when I feel bad.

My husband loves stewed chicken. His mean grandma made a great one. She was the type that if I asked for the recipe she left out ingredients so no one else could make something as well as she did. I stopped asking her for recipes knowing that I would only get a partial recipe.

So so I had to learn certain recipes on my own. My mom didn’t cook that dish. Not sure why, it’s a great dish.

Defrosting a family pack of chicken legs and thighs for supper tonight and extra meals ahead. Half of them will go towards chicken stew with tomatoes and the other half will get roasted. In the fall weather we have been having I am seriously looking forward to chicken stew!!! If R was here I would make dumplings for him, but I don't need the carbs. Stir fried bok choy, which needs to be used up, and roasted spaghetti squash will do as a veggies with the roasted chicken.

Not sure about dinner tonight, I think Hubs is making Lobster bisque from a can with a steamed lobster, and doctoring it up ( not a fan of lobster, but I love any kind of soup) I however, have 2 loaves of chocolate zuchinni bread in the oven,, banana bread is next!

Hong Kong style street noodles with veggies and beef. It turned out pretty good. My husband liked it, oldest daughter liked it, too. Young daughter is allergic to veggies. Nah, she's not, she just doesn't like 'em. Wish she did. Right now, I have to puree and hide vegetables in her food.

Mom wanted Pizza, well actually she wanted sheese breadsticks, So we all had pizza, my usual pineapple, crushed peppers and cheese, DH and his double pepperoni, extra sauce, extra cheese, Ab and his combination.
Everyone had a salad as well except DH.



Send- I make our communion bread.

I will never bake bread again after the epic fail of attempting bread for communion. The women who came to help...no one knew how to bake bread.
The next day, I asked the pastor to not serve it, and he shut me up.....
Later, he was trying to break the bread to serve communion......hard as a rock!
What a grouch!

PB- thanks for asking. It went nothing like planned but I think it worked out better. Only a few people came and that was good as it wasn't overwhelming for Mom or any of us and two people visited with her for about 5 hours.
She was surprised by the two as she never expected to see them again and they had a lovely visit.
I did not have too many left overs, so that is good and the soup and salad went over great. As well as the pigs in blanket and cake.
Ab smoked the hotdogs I used in the pigs in blanket so Dh said they were extra good that way.
I am relieved it is all over and Mom had a good day. Now she is looking forward to Monday her actual birthday, and chinese food and dominoes.
Then I owe her a road trip later on in the year.
But for now, I am kicking back relaxing and relieved she had a good day and resuming back to real life and I have a few days of less stress before going back to work.
Sorry I got on a roll writing.
Thank you for asking and thank you for your encouragement and ideas.
But next year, Lord willing, we are going to a restaurant. Yup!!!!!
