Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
They had some cheeseburger macaroni, sweet corn, salads, and cherry cobbler.
I had a salad and some smoked Gouda and rice crackers, and yup a little cobbler.
Didn't eat enough protein today for sure and I am feeling it now.Forgot to cook some beans in time.
We are having homemade alfredo with Italian sausage and grilled peppers, cheesy garlic bread. Coconut cream pie for desert. Kinda pie. I busted the graham cracker crust in the pudding and now its mixed in.
Note: never use your pie crust to hold divided ingredients and then dump them out. All that butter makes that sucker slippery.
took me nearly 3 weeks to lose 1 1/2 lbs which I probably gained back this weekend 😬
I'm aiming for 10 lbs by December which would put me at what my drivers license states which is up for renewal in January
I learned something new today. Did you or anyone else here know that Chinese TOGO containers are made the way they are so that you can unfold them and use them as a plate? I sure had no clue.
I remember when my Dad taped a 5 dollar bill (high up) on the wall in our dining room, every time my Mom lost a pound, back when she was seriously dieting (the 70's), now that was some Big Bucks incentive. Thanks for your support everyone, I am scared spitless to get on that scale in the morning and take a picture of it! Thankfully Only the Diet Administrator (my chunky Niece) will see the pix or know my weight, baring some sort of cyber attack, lol!
I can see it now, "Oops Aunty Stacey, I accidentally posted your pix on the FB messenger", which is how we are conducting this Diet Challenge. It is really neat how every time one of the diet group posts something, the FB messenger icon pops up on your screen, so there really is great support and everyone can see it!
It is nice though, seeing plans forming for exercise buddies, invites to Zumba classes and swim classes, walking down on our waterfront, and recipe and diet tips being posted already, and this thing only began forming online two days ago, and it begins tomorrow!
Dieting is definitely easier when you've got a buddy system, plus its already been discussed that there will be no shaming of those who give up or do poorly along the way. Thank God!
Tomorrow it’s back to the Birds Eye cauliflower rice (which is very good!) and a little protein (tuna steak or chicken).
If you haven’t tried Birds Eyes Mashed Cauliflower with Roasted Garlic, you’re missing a treat. My husband thought he was eating mashed potatoes.

A 50 dollar buy in, to lose 3% of your boydy weight each month. So there are about 18 of us signed up so far starting tomorrow, Me included, UGH! What have I gotten myself into? Lol!
Wall, I definitely need to lose a bunch of pounds, so hopefully this will be Motivating factor, plus it will be a lot of fun encouraging each other along the way! Wish me Luck!
I had veg. lo mein, lots of broccoli(DH gets beef & Broccoli and I eat the broccoli, he eats the beef, works out great), fried rice with general Tao sauce all over it. Yummy!
Mom had sweet n sour chicken, veg lo mein, rice, and some cream puffs and orange cake.
DH had beef & Broccoli, chicken & broccoli, rice and lots of little coffee cakes he loves, AB had beef & spicy garlic sauce, and lots of deserts
Wont be having chinese again until my birthday in December. We always over due it, but it is sooooo good.
Do not be afraid of baking your own bread. We do it all the time, you too can do it.
Daughter, SIL and grand kids are coming for Chili, cheesy corn bread and the special request is my Cheesy baked Mac-N-Cheese. (with the "secret" ingredient..dry mustard)
I’m at the beach in NC. Nice weather. Ate at my favorite local seafood restaurant last evening. Doing some cleaning out today. Because of the storm special trash pickup on Monday. Anything other than hazardous waste, paint.
Bread is not hard to make. Once you get the feel of it and are comfortable with a basic bread recipe you can play around with making sweet breads cinnamon buns, rye bread etc. Somewhere I have a recipe for very light rolls which require little kneading and are fool proof. Delicious!!! I never used anything special - just regular pans.
Please don't bother with a breadmaker.
I have been baking the "Overnight Almost No Knead Bread" for a while and it is so easy. I call it Stupid Simple.
ANYONE can make a professional looking, great tasting bread with hardly any effort.
I could send the recipe if you like PM me or look up Almost no knead bread recipes.
Basics mix flour, yeast, salt and water in a bowl. Cover and let sit on the counter 8 to 18 hours.
Turn it out onto the counter turn it over a bit just to deflate it.
Form it into a loose ball (it is rather wet and sticky) cover for 1 1/2 hours.
Place a Dutch oven in the oven and heat, when it gets to temp dust the bread with flour make a few slashes in it then plop it into the Dutch Oven cover and bake, remove cover and bake a bit longer.
Dinner tonight.
I made lasagna and a fresh boule.
I had thawed out what I thought was pasta sauce only to find out that it is Chili so I had to make sauce for the lasagna.
When I told my daughter about this she said..ok when are we having chili.
So tomorrow night
Chili, jalapeno cheddar cornbread and eldest grand son has requested my baked Mac-N-Cheese so that is the menu for tomorrow.
And I have enough left over lasagna for later in the week a meal or two. I may freeze half of it for next week as well.
Maybe the thought counts too.😀
