Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
Tonight I had 2 air fried chicken drumsticks and some veggies. They were tender on the inside and crispy on the outside. What an easy way to cook!
Use a glass rectangle to hold up the sides of a corn tortilla.
Take the ground beef out of the refrigerator that you cooked earlier but were too stressed to make something out of it.
Place the corn tortilla in the glass container.
Add the cold ground beef.
Find the shredded cheese, add lots to give it some body and moisture.
Microwave for about 22 seconds, then 10 more if needed.
That new lettuce can be skipped, it's too hard to get it out and wash it.
Add some taco sauce.
Go to where the T.V. can distract you....it's okay to eat in bed just this once.
Dh likes it so much he brought me a second one, cooked it all by himself.

It was sunny, warm, and a beautiful day.
I just don't want to cook lately.
We did make some good salads at 8:00 p.m.

Today was better than yesterday's Chili.
Still, it could use something-did not use tomato paste, but it is fine the way it is.
It could be gone tomorrow.
New problems with the understanding of how to use the pressure cooker have devolved into a dangerous situation with dH helping to cook the beans. He set a timer for 2 hours, when it only took 25 minutes. The whistling constant release of extra steam build-up gave him away.
