Your profile doesn't mention that this woman has any dementia. Might she?

Is she damp at all when these events occur? If she is having night sweats she may feel wet even though her bedding is dry. Changing just her night clothes might be an easier solution.

Can she do the bedding change on her own?

To have her sleep (and yours!) disrupted this way each night is not good for her. I'd discuss this with her doctor. If she is having night sweats, perhaps that can be addressed. Or she can be helped to sleep through the night. If she is hallucinating the wetness the doctor should know that, too.
