I have documented the things they have said to me. We never signed a contract. I had it tonight, so I just walked out and will not return. What are the legal ramifications?

Find Care & Housing
That happened with my parents, my parents were fall risks, my Mom was determined not to have a caregiver in the house. Thus the Agency caregiver called me telling me Mom wanted her out of the house, and I could hear Mom in the background "If I need any help I will call you". So I gave the caregiver permission to leave. I was glad the caregiver called in case I needed to rush over to my parent's house, which I did not. My parents were clear headed to make their own decisions. I figure I would let the chips fall where they may.

Who do you answer to? Who hired you? An adult child? One of your patients? If someone other than the couple hired you contact them and let them know you won't be coming back and tell them why.

You documentation is fine and I believe that they treated you poorly but it was impulsive, unprofessional, and irresponsible to just leave in the middle of the shift, placing your clients in harm's way and at odds as to what to do the next day without assistance.

No contract...? I can't see there are any legal ramifications. Are they able to do their own ADLs for a few days while they seek other help? If not, alert your local adult social services to do a welfare check. You know what...? Do that last part anyway. Report the couple to local social services so that they can get a social worker to help them out... hopefully.
