There are 5 of us. 5 Children, Mom with Dementia, younger and older brother are executors and are hiding everything from us. Caregiver is 18 yr old niece of brothers fiance.

You might want to discuss this with an Elder Care Attorney.
Any legal paperwork that was signed by her after her diagnosis of dementia might be invalid.

Keep in mind that any legal suit that is brought up will damage the relationship between the siblings that are in the middle of the younger and older. (did that make sense?)
If the caregiver is doing a good job, is being paid legally for the work that is being done and she is not abusive that should not be a problem. However if she is getting paid less than what is "on paper" and a brother is pocketing the extra that will eventually come back and harm the 18 year old with she has to pay taxes on more than what she really got paid.
