My mom is 83 and has dementia. When the caretakers or I try to move her around in the bed, she says we're hurting her?

If your mom has been in bed for a while it probably does hurt her to be moved or re-positioned. Immobility causes pain.
Maybe her doctor can suggest something you can give her for the pain prior to moving her.
