My mother hasn't eaten solid food for about two weeks. However, when we change her diaper, it is always poopy. I can't see how she can produce any waste when she's not eating. She was v-e-r-y impacted about a month ago, so could the poop now be left over from then?

Your body continues to make bile, that is what you;re seeing as 'poop'. Is she drinking just clear liquids, or something like Ensure? Those types of nutrition drinks have whey and thickeners in them--again, they will produce 'poop'.

Our digestive tract is very sensitive to everything--and continues to move everything we swallow along the way.

If this is concerning you, talk to her PCP.
