all the information here seems to detail the care of elderly parents, all the money and legal information here seems to apply to the care of elderly parents, how does this apply to a dementia spouse's caregiver?

I was also the caregiver for a spouse with dementia. Now I'm helping to care for my mother with dementia. When it comes to practical matters such as how to handle various symptoms and behaviors, it doesn't really matter what the relationship is. It does matter for some more personal decisions, like nursing home placement.

Notice that the subtitle of this site is "Connecting people caring for elderly parents." That is why there are mostly people here who are caring for elderly parents. :) But I found the site helpful while caring for a spouse, and there are posters whose parents aren't so elderly, and people taking care of aunts and brothers, etc. If you find this site useful, welcome!
