I have been appointed legal guardian for my mother. I am selling her house and want to put the proceeds in a trust to be used for her care. Any suggestions?

Consult a Trust and Estate Attorney. There are various types of trusts, and you want to make sure it's the correct type for your situation. We aren't qualified here to give legal advice of that sort.
