He receives dialysis three days a week, and still walked a mile every day and was driving. He also attended church every day.

If he has chosen to discontinue dialysis it could be weeks or days.
This should be discussed with the Hospice Team and they can give you a better idea what the process will be.
If he has been admitted to Hospice for another reason other than Kidney and he chooses to continue dialysis then that will change outcome.

I think you must surely know that nobody can tell you how long your father will live.

Two days is nothing in terms of stroke recovery, and in any case it depends on the nature of the stroke, how it affected him, and whether he remains vulnerable to further events. Wasn't the outlook discussed during the hospice admission process?
