I have had POA for several years now and my name is joint with my father on most of his financial accounts. Now that I am more involved in paying his bills and monitoring his accounts, he thinks I am going to steal his money.

All I can think of is to ask him what records he would to check, and show them to him. If you are making payments by bank transfer, it can be unintelligible to older people. Making lists etc may be extra work that you don't need, but it might be worth it if it drops down his worries about this. A simple accounting package, or even a spreadsheet, might be the easiest option. As well as the list, it will show him that expenses are very similar all the time (or that there are reasons for a particularly high month). What a trial!
