Hello. A friend is driving from Florida to RI to stay with my mom while I'm away for 10 days. She may have to take my mom for a PT appointment or two, but will have the days to Uber or do her homework. My mom has some mobility issues but is quite self sufficient in the house otherwise. She doesn't need special care; she can get her own meals, do laundry and get to the bathroom all on her own. Mom would be more comfortable with this friend staying over just in case . My friend will also have all meals paid for. I want this friend to want to help again so I want the pay to be decent enough to make it worth her while, however, I don't want to go crazy and overpay because that would set the precedent. Any suggestions?

Ask her for input? I was guessing $50 - $100 per day? And all expenses paid, right?

A hired in-home companion/helper would generally cost about $300/day. Your mother may not need nursing care, but your friend will be "on duty" 24/7 for ten days. I wouldn't do that myself for less than $100/day.
