Will she be working over Christmas too? If so, and she is a direct employee and not hired through an agency which may have rules about accepting gifts, I'd suggest you pay her double for the holiday days + get her a small but personal present: hand lotion to match her favourite scent, some nice gloves in a colour she often wears, something like that. Something that shows you've noticed her as an individual, that is, rather than a sort of animated domestic appliance.

If you're giving her paid time off, then enough money for her to buy the sort of thing she might spoil herself with.

If she's taking time off but not being paid, give her the cash equivalent for at least two days' pay.
