I see that your original question from three days ago which I had not seen has now been divided into two questions.

I don't know how room and board is calculated for taxes. Ask a CPA. You either support yourself on what the client can pay or you go get another job.
I gather from your profile that you are a live in caregiver for someone. How long have you been doing this? What are the person's health problems?
