Here are a few things that worked for my mom:
Eat with her, give her small portions so she doesn't feel overwhelmed(give more if she wants), set a eating schedule with snacks in between, cut out or limit coffee(mom was a big coffee drinker so she wanted to drink coffee not eat). I let mom "help" me with meals (she likes to sit in kitchen and watch me cook).
My mom used to be a "pickey" eater. Now with the dementia she will eat anything. I have found that foods she didn't like before she really likes now. I make sure mom takes her vitamins, has good fluid intake, and try to make healthy meals.
I hope maybe one of these suggestions might help. It is frustrating when they don't eat. My mom and I used to fight with this issue for months. We went thru alot of trial of error to find what worked the best with mom!

If possible take her to a buffet and see what she chooses (my mother loves buffets). Since my mom wears dentures, she prefers soft foods like, jello, pudding, ice cream, biscuits, gravy and chicken. I use to worry about her getting a balanced diet, now I give her a multivitamin daily and keep ensure around for when she's not eating well. Mom will also tell my she doesn't like something, when she really means she's tired of it or it just isn't what she wants. I know it's hard and frustrating, hang in there.

My mother had this same issue.We had her doctor give her an appetite stimulant(Megestrol). It takes about a week to start working, but it will work. Mom eats tihings she has never liked before.

I would not make a big deal of it and tell her that she must eat a well balaced meal to stay healthy, even just a few bites of anything on the plate. I would say that you want her healthy and able to do things and not get sick because she is not eating. Positive reinforcement has worked best.
