I have tried wiping them with a damp cloth and looking at duvet covers but they are so expensive! I need something warm that I can wash in a household washer/dryer

I invested in a material called PUL from Wazoodle.com. Waterproof and very easy washable. I use pul as a bib for eating and a mattress protection. Thin, lightweight, easy care. A little costly at first but well worth the price. I have been using mine for years.

PUL is often used for reusable diapers and female hygiene products.

Why does she need a quilt. I basically use mine as bedspreads I turn down at night. I sleep with a sheet, thermal blanket and blanket and I am warm enough.

How about Chuxs. Place it where she tends to wipe her hands and spits out food. They come in 2 sizes. Regular size is blue, larger size is peach.

From your profile it doesn't sound like your mom is bedridden, so why is she eating in bed? And not sure what kind of bed she is in, but they do make adjustable trays that slide right up to the bed(like you see in hospitals)that might make it easier for her. And you can pull down her covers and cover her with big bath towels instead when she's eating so all you will have to do is wash the towels.
And of course if at all possible put her in a transfer chair or wheelchair and put her up to the table and keep her covered with the towels or washable blanket(s).

Is she eating in bed? Bedridden or just uncooperative? If uncooperative, do what you can to get her to the table. But if she's going to be in bed, put a cheap easy to wash blanket or better yet a waterproof backed item over the quilt. I would remove the quilts if you can't get any cooperation. Stay with her while she eats? Have a damp facecloth ready to wipe her hands before she can get at the quilts.

Sounds like you could use some help with mom too! You must be under a lot of pressure so please do what you can to get some help and take care of yourself too.

Best of luck.

Use cheap Wal-Mart or even goodwill blankets instead. Put the quilts away.
