What is the likelihood of winning in court if we pay 5000 for our lawyer to petition the court to keep guardianship in the family? What are the court proceedings like for guardianship hearings for the elderly?

Everybody gets to address the court. If the whole family agrees on which of them should be the guardian, most likely, no problem. Now if someone outside has started the proceeding and doesn't think anyone in the family is capable.... well everyone gets to say why they feel or acted as they did. Sometimes the court appoints an outside guardian because of family issues of past behaviors.
