Parents are moving into an assisted living that does not have a nurse on staff daily. She needs help with  administration twice a day, I live in a different state , Assisted living will not accept her unless we have somebody to administer twice a day, are there such services in Escondido , CA that I can hire?

Then they are not going to assisted living, but an "adult home" there is a big difference. Check further.

No it is an assisted living and a very large one but they cannot administer Insulin since there is not a nurse on staff ,my father can't do it, I am looking for a service to help with this

wow. Here in NY they have an RN during the day, and he is on call at night.
Good luck with that. Look into a Medi-Cal waiver for Assisted Living if they need that.
