Over Charges; Assisted living does not break down the bill as to what job was performed. Are they required to let us know in detail?

I'm guessing it depends on the contract. It would be a good idea to ask for a meeting of staff so you have a full understanding of what their care included and how they determined billing. I felt I was well informed about Mom when she was in IL, and also in the NH. Not so much Mom's AL.
Mom's AL charged by levels, depending on how much help they determined she needed. She was level 2 or 3 which included making sure she was at 2 meals a day (she never went to breakfast so she went 18 hours every day without eating - I don't think they tried to supplement, and I used to bring her yogurt, etc) It also meant putting in and taking out her hearing aids,  giving her meds and helping with showers but she refused help and in 5 months I know of only three times she showered. That small amount of attention did not seem to me to be level 2 or 3 as, to our knowledge she was very independent and mostly refused assistance we were paying for. We were charged an extra $85 a month for adult diapers. She was not incontinent but had leakage.
It was never clear to us how they determined that level and it didn't appear they did anything else day to day. I asked a lot of questions of the nursing staff when I visited because they didn't volunteer anything on their own.  We would have appreciated some sort of comprehensive report on a monthly basis and if she has stayed longer we were going to ask for that. We warned she barely ate and put food in her purse, but they didn't monitor her eating although they weighed her monthly, we were not told unless we asked. 
So, it would be worth it for you to have a meeting with them.

Sit down with business office and go over the contract.

Sometime there is ala care billing and some time per item billing. Look at your original statement
