For the only one “left” - we need to take care even more now so how do you eat healthy. Do NOT want to just do supplements (expensive too) since we should chew our nutrition. And rather not cook which means shopping (OK) but food wastes away in frig.Support and kindness to all of us here❣️

Thinking about this, I'm more of a grazer, but I eat more in the AM, so I have for a long time, try to stick to healthy eating in the morning, before noon, then I don't worry so much the rest of the day. I usually have a banana , toast and PB, or Cheerios, in the morning, might have a yogurt, or if I'm going to moms I usually have a boost. , some times oatmeal. Then the rest of the day I don't worry so much. might have some ice cream in after noon, or in the evening. Had chicken salad sandwichs for dinner tonight, and salad. All in all I think I don't do too bad. I just put it in my head that mornings and lunch , should be healthy.

I honestly eat only for myself as my partner, with his severe gerd, eats at different hours and in different amounts and different foods. At 82 I require VERY LITTLE to eat (It is said we can sustain life on a spoonful of honey daily). I always have fresh fruit, berries, mangos, bananas around. Always have Keifer in fridge. Make things like tuna salad, chicken salad, egg salad for sandwiches. Often made huge batch spaghetti and meatballs and freeze, pesto and freeze, and so on. Then have pasta any time I want. And so on and so on. You will find what works for you wandering the aisles of the store. I often make a huge blade cut port roast and shred, have in small baggies, unfreeze for tacos and so on with fresh peppers. I eat BLTs often. Have burgers ready to grab one at a time. I just don't have a problem finding things I love to eat. Best out to you.

Also, scrambled eggs are great. Most stores will sell six instead of a dozen if that’s an issue. You can add vegetables. Just sauté them a little first before you add the eggs.

I know it can feel like too much to shop and cook for one.

Some dishes like soup, baked pasta dishes, lentils, or beans can be made in batches and then you can freeze the extras in single portions.

In some areas, there are meal delivery, meal kit, or meal prep services that will deliver fresh cooked food in portions for one person, I think it’s usually twice per week. In my area, quite a few services do this including vegetarian.

You may qualify for Meals on Wheels?

Frozen vegetables are good to keep on hand. You can make individual servings without any chopping or waste.

Nutritious snacks like hummus and carrots? Or organic peanut butter on Apple slices? You can buy frozen edamame which are delicious and very healthy.

You mention fruit and yogurt. They can be blended into a smoothie and other options include protein powder and/ or you can add greens like frozen kale to smoothies for extra nutrients and fiber, also a tablespoon of ground flaxseeds. I also like cottage cheese with fruit for a change sometimes.

Many grocery stores now deliver, and you can get prepared meals in single portions from them also. Either refrigerated or frozen, that you can then heat up. Or there are shelf stable pouches of “tear, heat, eat” foods.

If you have farm stands nearby, I love to get a fresh, juicy tomato and slice it to eat with balls of mozzarella cheese. You can also get a small portion of those at the grocery.

Some communities have healthy eating clubs that will get together once a month or more to prepare and then enjoy a healthy meal together, then everyone who wants to can bring home leftovers. I have tried this and found it very nice.

For me I just keep trying and fall back and try again. I can't put a lot of thought into eating healthy because then I get obsessed and don't eat enough, but that's just me.
