Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
Glad you are trying breakfast. Hope it becomes a habit.
Tonight, I have no appetite but my stomach is hurting because it's empty. So, although I'm not hungry, I will have to force myself to eat. After I shower, I'm going to make a sandwich. I was torn between tuna sandwich with lots of onions and black pepper in it. Or salami and egg sandwich. I will decide while I'm showering. The thing is... I feel so obligated to make enough for sis. Yet she rarely thinks of me when she makes her own food. Ha! Tuna sandwich. I just remembered I have an unopened can of pringle chips.
We have meatless meals once or twice a week, so cooking for a vegetarian is no problem. (A vegan would be more of a challenge.)
Tomorrow I'm going to the Shakopee Mdewakanton Sioux Community Wacipi (Pow Wow). Fry bread, here I come!
I bought a cherry pitter. What a fun toy. Friend sent a huge box of cherries from Montana and I made a pretty cherry/kiwi tart for dessert. Even better than it looked, and it looked fine.
I also got a julienne vegetable cutter and turned a big zucchini into fine strips. Those went on our open faced veggie melt sandwiches, along with 2 kinds of cheese, sprouts, mushrooms, onions, tomatoes, and bell pepper, all on sour dough bread. Awesome.
Dinner was delicious! SIL dropped off some baby back ribs from Applebee's. The little salad was a disappointment but the meat was delicious. I ate with my fingers - so that I can chew off as much of the meat from the bone. I had to get up several times to wash my fingers from all that sauce.
I was in Rochester Mn most of the day. Had lunch with a man who has early-onset Lewy Body Dementia, and his wife, and we sat and talked for a long time. I'd gone without eating too long and after I took my blood sugar level I gobbled the french fries like there was no tomorrow.
Not too hungry for dinner, so a simple Tuna a Shoestring salad did me just fine. I sure could use some heavenly hash about now, though.
We had omelets with chopped green pepper and cheddar cheese. Easy Peasy. Can't wait for the home growns!
