Years ago I complained about the food in a cafeteria of a teaching hospital adjacent to the med school where I was working. For example, I took their vegetables, went into the rest room, and rinsed as much fat and salt as possible from them. The comment I received was along the lines of "oh, you are not from this region so you don't appreciate our local cuisine". To some extent that may be true, but I believe a hospital should be trying to promote healthy eating by setting an example. Unfortunately, the concept of a healthy diet is simply foreign to most American institutions, restaurants, and grocery stores (most have three sections--salt, fat and sugar), as evidenced by what is offered, and by the physique of a large percentage of the population.
